Being from South Florida I love fish, but am rather picky about it being fresh. This being the case I usually refuse to eat it if I’m not on the coast. I made an exception last night for some salmon I made at home. My dad suggested it, and assured me the salmon I was about to buy (on a special sale from The Fresh Market) would be fine to eat.
He, of course, was right, and for about $7 we had more than enough fish for last night and leftovers for Andrew’s lunch today.
Baked Salmon:
Ingredients:
1 piece of salmon
1/2 – 1 cup brown sugar
Directions:
Place salmon skin side down in a oven save baking dish and lightly cover in brown sugar. Cover and refrigerate for 2-3 hours.
Uncover and bake at 390 for 20-40 minutes, depending on the size of your salmon. (Ours was just over 1 pound and we baked it for 30 minutes).
I made some roasted red skin potatoes to go with the salmon, but I think some fresh asparagus would also be good. Either way, this is a quick dinner that reminds me of dinners at home.

I love baked salmon! You can also do it with honey, soy sauce and chilli…hmm I got salmon cravings now!
