Apple Salad

Although the snow outside says otherwise, it is spring here in Kentucky. And after a winter of eating soups, pastas, and anything else we can warm in the oven we are more than ready for some fresh salads. One of our favorites is this Apple Salad. It is quick and delicious – perfect for a summer dinner, or for lunch on a Sunday afternoon.

Apple Salad

Ingredients:

½ head green leaf lettuce

½ head purple leaf lettuce

1 apple, thinly sliced

½ cup sharp cheddar cheese, cut into small chunks

½ cup cashews

Blue cheese salad dressing

Directions:

Wash and thoroughly dry lettuce and slice into small strips. Add apples pieces, cheese, and dressing to lettuce in large serving bowl, and toss to combine. Top with cashews and serve. This makes enough for two dinner portions or four to six side salads.

This salad is great on its own, but can also be served with garlic bread to make it more of a complete meal. It is fresh and never gets old – we have this salad weekly all summer and it never disappoints. We hope you enjoy it too!
